Rosemary Garlic Steak

4 ½ oz. protein, 1 carb & 1 veggie
   Ingredients:
  • 4.5 oz. round steak (or any steak 10% or less fat)
  • 1 Tbl rice vinegar
  • 2 Tbl rosemary, roughly chopped
  • 1 tsp garlic paste (35 cloves, minced finely)
  • ½ tsp crushed red pepper flakes
  • new or fingerling potatoes * (equivalent to 3-4")



  1. Pour vinegar into a small dish. Add steak and coat
  2. In a small bowl, combine garlic, red pepper flakes & half the rosemary. Rub on both sides of steak.
  3. Place steak in a small dish, cover & refrigerate for at least 4 hours or overnight.
  4. Grill to preference.
  5. Serve with "Lemon-Kissed Asparagus" (recipe below) and roasted new potatoes*.
  6. ENJOY!!
* Roasted New Potatoes: Preheat oven to 350°. Place new or fingerling potatoes on a lined baking sheet. If you have a large red potato, chop into ¾" chunks first. Very Lightly spray with cooking spray and top with reserved rosemary. Place in the oven and roast for 30 minutes or until it has a crispy brown skin. Remove from the oven and serve.
º Round steak is something you may have once or twice weekly.
Lemon-Kissed Asparagus

Ingredients:
  • 1/3 lb fresh asparagus
  • 1 Tbl fresh lemon juice
  • 1 Tbl fresh lemon zest
  • Pepper (to taste)

  1. Rinse asparagus & break off any tough, white bottoms.
  2. Cut into 1-2 inch sections, slicing the asparagus at a slight diagonal.
  3. Fill medium sized pan half way with water and bring to a boil.
  4. Add the asparagus and reduce heat slightly to a simmer.
  5. Parboil the asparagus for exactly 2 minutes.
  6. Drain hot water.
  7. While asparagus is still hot, measure out 1 cup and toss them in a bowl with the lemon juice and zest and add pepper to taste.
  8. Serve warm or at room temperature.
