Broiled Steak and Blue Cheese

4 ½ oz. protein & 1 carb
   Ingredients:
  • 5 oz. raw Maverick Ranch® filet mignon*
  • Fat free blue cheese dressing (Under 30 calories/serving)
  • ¼ cup onion, chopped (Spanish onion or scallion works well)
  • ¼ cup tomato, chopped
  • 2 ½ oz fat free cheese, shredded
  • taco seasoning mix (to taste)
  • seasoned pepper (to taste)


Spread both sides of steak with dressing and sprinkle with seasoned pepper. Grill or broil to desired doneness*

* Be careful! Extra-lean meats require less cooking time...don't overcook.
º To make this a complete dinner, serve with "No Cheat Steak Fries"** and broccoli with lemon juice.
** "No Cheat" Steak Fries
Ingredients:
  • 1 small organic potato, cut into wedges
  • 5 squirts butter spray
  • paprika, garlic power, dill, or any other sodium-free seasoning (to taste)
Preheat oven to 450º. Par-boil potatoes for about 2 minutes (so they are only partially cooked). Place potatoes on a non-stick baking sheet; spritz with butter spray and sprinkle with seasoning. Bake about 10-15 minutes, or until lightly browned.
°The lazy-cook alternative: Use Simply Potatoes® new potato wedges instead of a whole potato. These pre-cut redskin potatoes save time...¾ cup would be equivalent to 1 small potato
Note: 5 squirts "fat free" butter spray = 1 gram of fat.
